Tom Dawson and John Baker co-founders of Irish Hill are being retained to oversee the business integration. Their expertise reflects a combined 60 years experience with Louisville’s Dawson-Baker Packing Company, a company with a worldwide reputation for producing high quality meats.
Mattingly Foods of Louisville currently operates its own Meat processing operation under the A. Thomas Meats brand which has been in business since 1946.
